You mean time-wise? It depends on the country and of course on referee's dedication. One can spent a lifetime working on Roman coins and never be done, and you probably need to spent few minutes daily to check on Nauru...

Regarding whether you should do it, I cannot really say. Everyone has to decide on their own. You can always ask for rights removal afterwards, nobody can hold you on such position.
Actually I am quite interested in being Chinese Empire (i.e. China - Empire & China (ancient) ) referee as I am able to access Chinese literature and information. I also found that the cataloging is somewhat confusing especially China (ancient) page so I hope I can make a change.

There are no open countries, all of them are closed due COVID-19.
Or you can go to the countries you are interested on, and look on the very bottom of the page, if has a referee, will be shown there.

None of those, as far as I can see, has a referee (for coins).
A country with * is in a section and the link is to one part of it.
P.S. Not sure how it works for sections.
Some countries that are at the start of a section do, themselves, have a referee -
but sometimes other countries within that section do not have a referee.
Or the other way round round, where the country at the start of a section does
not have a referee, but some countries with in that section do. One example:

* Shkodër, City of [no referee]

If anything related to modern Italian coins is up (any Italian colonies, napoleonic kingdom, united provinces of central Italy, Vatican City, San Marino or any later Italian states), I’m in! I‘d to get some experience before I even think of tackling all of Italy...
Even then, I don’t have a ton of editing experience so it would probably a co-referee. I can help with translations and corrections, as well as updating some of the articles (a few of them are abysmal but it mostly affects patterns and the like).
