As for your initial question, I think Numista (and other similar sites) uses not a single script but many scripts which were developed over a long time (and are still in development). I'm not aware of anyone offering the source of such software package for free.

As I understand it, Jimdo is a platform for website building, but I don't think they have many social features.
Depending on capabilities and ambitions, perhaps a separate server with social software like MediaWiki would be a better option. Using MediaWiki, people could create a catalogue of coins or other items by collaborative efforts.
