Another area with a hard to choose favorite... so, I'm not going to. Instead, I'll mention some coins with animals that I like, in no particular order:
- Chinese pandas - of the ones I have, I like 2012 and 2013 designs the most
- Australian kookaburras - 1994, 2001, and 2008 (though I don't have any of those years)
- Papua - New Guinea circulation coins
- Coins showing big cats (Fiji Diamonds of Nature coins are absolute eye candy)
- Irish 1 pound with an elk
- Coins with birds of prey in flight (mostly US and Canada)
- Coins with parrots (Seychelles 25 cents, Fiji 20 cents)
- US buffalo nickel - classic
- Niue 2014 Black Rhino
- Tokelau 2014 Yellowfin Tuna has a pretty nice design
and many, many others.
This bird is not only Huge... it is also hard to spot, You have to be in special areas of the Cordillera de los Andes, I remember when I was a kid that we had recorded only 6-7 Condors flying over the Andes in Venezuela. Chile has nice designs with Condors...
You can also spot them in some parts of California or the Zoo's, They have 2 at the Zoo in Tokyo, also Pandas :)

Haven't seen a condor, but speaking of rare animals... I have seen a few okapis at the San Diego Wild Animal Park some years back.

I haven't check that one yet... But I have visited twice Kruger National Park in South Africa, what a lovely place to check some wild life.
Back to the topic, Brazil had a series of Animals in their coinage too... I think I have them all.
Does Dragons and mythical animals count? Japan had some nice dragons design and the "Merlion" from Singapore is another nice one... that's supposed to be lion and fish, but looks like a weird dog to me...
There probably will be a lot more here because not every coin with an otter has the name otter in the coin name. Commemorative coins often do but regular coins with an otter on won't. My favorites can't be other than an international series I have complete; the Ibero-American Series II - Endangered wildlife, all from the same commemorative series, shared with up to 13 other countries, depending on the series. Don't know if there was/is another program as international as this one (2 Euro coins come to mind, but the EU being as wide as Mexico itself...):

Some animals are easy to find because of national coats of arms. But should we include mythical ones, as some ones are showing them?

Coinage in the Irish republic always has been an animal farm. I've noticed the Pingin above on this thread, but let's add the 3d (leat reul) and 6d (reul)

We're having fun listing species.
The point there is not to put twice the same species. It needs a bit of research into zoology and languages (wiki works fine for that. Spot a species in your own language and change wiki's language, then you get the translation ). Interesting though.
Sure Erdvilla's Mexican fauna is not there !

Here's an image dump of most of the Canadian tokens in my collection that have animals on them. It seems like "wildlife" was a very, very popular theme for these.
