I'd say stuff you don't normally see at your local store.
The last couple shows I've been to back in the States had vendors with really cool stuff. Nicely toned silver, interesting test print notes, stuff like that. That and bulk world coin opportunities, probably looked thru for silver, but still.
Take stuff you'd be interested in trading too. Most coin show guys are just like you, they like to trade and collect.
Make a list too of stuff you'd like to get. Since you're in the States there's going to be more US stuff available but sometimes there's a guy or 2 that has a trove of foreign stuff. And get your haggle stills ready!
I miss going to shows like that. There are ones here in Switzerland but not near my town so it costs a few bucks just to get there.
Coin shows are super fun and in my opinion the best places to buy/sell/trade. Bring anything (of reasonable value) you want to get rid of.
I would say to look out for the most popular stuff, or stuff that is selling fastest. But before you buy, always go around all the tables and ask everyone for the specific coin/coins that you are looking for. Write down their prices, conditions, etc. also remember to bargain hard! Especially when you say that another dealer is offering a certain coin for a cheaper price, I find that dealers are willing to sell a little lower than they will initially admit.

I'll be spending over a hundred in gas both ways and there is no local coin shop where I live, so I have all my coins shipped in from eBay swappers, Amazon, or the local bank.
