The problem is that the official name of the currency changed to colón in 1892 without that change being implemented on the coins or notes until 1920. For me, it makes more sense to start the colón when it actually appears on the money, with a note that “officially” the name had changed, rather than having a load of pesos listed under the name colón.

Yes, this is other solution: assign to other currencies.
Now we have:
Real (1828-1889), with 2 coins of 1 Peso (pattern, 1861)
Peso (1877-1892)
Colón (1892-date), with 1 coin of ¼ Real (1909) and 5 coins of 1 Peso (1892-1914)
So we could move these:
1 coin of ¼ Real (1909) from Colón to Real
2 coins of 1 Peso (pattern, 1861) from Real to Peso
5 coins of 1 Peso (1892-1914) from Colón to Peso
About dates of currencies we can keep the official dates (I agree more: there are other cases with coins issued some years before the official date of the new currency) or change:
Real (1828-1889) → (1828-1909)
Peso (1877-1892) → (1861-1914)

There were notes denominated in pesos until 1919, so we need to take those into account if we change the dates. I wouldn't favour extending the dates for the real, only for the peso with, as suggested earlier, the addition of the subdivision of 8 reales.

Thus?
Real (1828-1889)
Peso (1877-1892) → (1861-1919)
move 1 coin of ¼ Real (1909) from Colón to Peso
move 2 coins of 1 Peso (pattern, 1861) from Real to Peso
move 5 coins of 1 Peso (1892-1914) from Colón to Peso
Yes, let's do that, then see how things look. I wonder if we might want to move all pre-1920 coins to the peso but we can consider that once these initial changes are made.
