How does one smooth out crimps in a banknote. Is this the thing to do or will it be damaged in the process?

You are in the same realm as cleaning coins here.
If its a worthless note you can do what you want wash, press or even iron but this certainly damages the substrate and sometimes ink of a note and people who know there stuff can spot that.
Cleaning or pressing a note reduces its value. In many cases, collectors will not have a cleaned note in their collection.

In terms of flattening out a crease, you could put the note into a plastic flip holder, or an album page, or a board backed envelope which will keep it flat and gradually smooth out the crease.
