We won't need the Spanish monarchs. Their coins were spread across the world. Their use in Canada doesn't imply any authority. We'll need something along the lines of
Lower Canada: British monarchs 1791-1841
Upper Canada: British monarchs 1791-1841
Province of Canada: Victoria 1841-1867
New Brunswick: British monarchs 1784-1867
Nova Scotia: British monarchs 1713-1867
Prince Edward Island: British monarchs 1769-1873
Newfoundland: English then British monarchs 1583-1949
Of course, these dates don't reflect when coins or notes were issued for these colonies/dominions/provinces.
