How do I input/update the value of a coin in my new Numista coin catalogue?

my Screen is different without the Buying Value Option. See following image

 Maybe that your picture titles 

‘Edit items in my collection’ 

 whereas the earlier picture titles 

‘Add to my collection’ 

 

 Maybe.

It seems you have changed the settings for the visibility of that field (or the standard settings were altered, what I can't imagine).

Go the SETTINGS → Collection fields … and move ‘Buying value1’ to 'Displayed fields'.
