Yes on roast potatoes. 

I grew up in a house where the potatoes were usually boiled (my mom, who did all the cooking was Irish-American).  Well into adulthood I learned that the surface sugars in potatoes and veg (root veggies, brassicas etc) get nicely caramelized on roasting and make for much more flavorful version that boiling.

Yes! I literally am hungry!

Yeah very nice Toby Carvery is a chain of restaurants in the UK, I’ve been to one several times in the last decade or so in Peterborough not too far from where I live. I really like their roasted turkey’s with crispy skin, Yorkshire Pudding, gravy and veggies, and as a half Mexican I like to add a little heat with a spoon of mustard and horseradish sauce too.
