Pierwotna wysokość miasta Sancerre, na płaskowyżu o wysokości dwóch kilometrów na lewym brzegu Loary, wiąże się z legendą o zdobywcy Galii, Juliuszu Cezarze. Według tej legendy nazwa "Sancerre" miałaby pochodzić od hipotetycznego Sacrum Caesaris, czyli "świętego Cezara", następnie schrystianizowanego w Saint-César lub Saint-Cère. Jednak współczesne badania toponimiczne odrzucają to wyjaśnienie. Rzeczywiście, po opuszczeniu wysokiego miejsca, miasto przeniosło się na równinę, gdzie obecnie znajduje się sanktuarium poświęcone świętemu Satyrusowi, afrykańskiemu męczennikowi z III wieku, w pobliżu szlaków handlowych i cmentarza poza małym miastem. W 1034 roku wspomina się o zamku "Sancti Satyri": popularna forma Satyrus daje Sayre w starofrancuskim, a następnie Serre, stąd nazwa Sancerre.
